The story behind Western Whisk is especially sweet. Owner Kailie Rees, a Rock Springs native, started making cheesecakes because her family preferred them over traditional birthday cakes. What began as treats for family and friends grew into a home-based business and eventually a Downtown storefront, which opened in March 2026. SweetwaterNOW
Today, Western Whisk offers a rotating selection of cheesecake flavors, mini cheesecakes, flights and custom orders. Customers even get to help choose flavors through Facebook!
But here's something we especially love: Western Whisk isn't just supporting one local business—it's helping several others grow, too. Kailie has welcomed other local bakers, makers and vendors into her shop, offering everything from cookies and cinnamon rolls to handmade ceramics and boutique merchandise.
And she's helping bring people Downtown in other ways, too! Events like Cheesecakes After Dark, featuring cool cars, motorcycles, sweet treats and family-friendly fun, have given the community another reason to gather and enjoy Downtown Rock Springs.
